This is just a short post to announce that I believe that I have perfected my gluten free corn bread recipe. I miss the crumbly traditional cornbread, but this is quite delicious especially with butter. So, here it is...
1 cup cornmeal
3/4 cup old fashioned oats
1/4 cup coconut flour
2 Tbsp honey
3 tsp baking soda
1 tsp salt
1.5 cups milk
1.5 Tbsp ground flax seeds
1/4 cup coconut oil
1 can corn kernels
1 can creamed corn
1 egg
Mix all ingredients in a large bowl. Grease square baking dish, and preheat oven at 350 degrees. Bake for approximately 25 minutes until knife placed in center comes out clean. Let cool and enjoy.
